I served it over a combination of mashed potatoes and mashed cauliflower, and it was delicious. It got high marks from my husband as well. Was even thinking it would be tasty with frozen peas added during the last 5 minutes. I made sheet pan broccoli and zucchini for a veggie on the side. We served over egg noodles but I bet mashed potatoes would be good too!

Get this — I made it in September 2024, and put the leftovers in the freezer since we were leaving the next day on a long vacation. It ended up hidden in the back of the freezer, and I just discovered it today – one year later. It was absolutely fantastic! I heated it up in the microwave low and slow, and served it over some fresh egg noodles. Hubby was licking the last of the gravy out of his bowl, no kidding. I followed the recipe exactly except I used boneless skinless thighs instead of breasts. Good thing I labeled the container so I could go back and find the recipe. Love your meals, Monique!
